Tube or tubeless tires - is one better?

I'm replacing the tires all around on my Ford 3000, and took off fluid filled tires with tubes. I'll definitely run a water-weighted setup. The local tire shop recommends running the fluid-filled tires tubeless, and I know that I've run tube-type tires without tubes before. They are quoting one price for tube-type tires, and a higher price for tubeless tires. What's the difference - are tubeless(specific) tires made better? Is there a benefit either way?
