engine cleaning

Inherited a couple of old Ford tractors & and old Oliver that appear to be in good shape if you can get past the piles of greasy,oily build up on teh engine and other parts. My uncle was an old bachelor and didn"t keep much of anything clean. What is a good way to cut through all that build up? I know a high pressure water hose would work but it would also force gunk and water into palces it shouldn"t be. I"d like to give the old girls a good cleaning so I can tell what I"ve got to work with. Anyone have ideas on a good way to cut thorough the gunk ?
