O/T Kinda = Pre-Emergents Veggie Gardens

Sorry for the off topic, but I do use my tractor to plow this garden..... I made the mistake a few years ago of putting Chicken Manure (not Litter) on my garden spot of about an acre. Now, weed control is way out of hand. In fact, I didn't know ragweed got that big! At any rate, I have been told I need to put a pre-emergent herbicide on it to stop the weeds before they sprout in spring. My question is have any of ya'll ever used pre-emergent on gardens where you grow veggies for your family to eat?
Call me paranoid, but I don't want to poison myself or my family..... All advice and guidance is most welcome! Thanks!
