Gooseneck Hitch Installation

What is the best way to install a hitch in a K3500 pickup. I see that Reese and DrawTite have fold down hitches where all the drilling is done from above using a template. They, and others also have kits that sit on rails, more like an RV type hitch, again drilled from above. Any opinions on these or the different brands, Reese, Putnam, DrawTite, Valley etc.?
What about removing the body and making your own plate that bolts to the frame rails, with just a little hole for the ball to poke thru? It wouldn't bother me to have to get under the truck a few times a year to remove/install the ball.
