If you have a thermostat in the cooling system, the coolant temperature should be held near the thermostat rating unless the ambient temperatre is very hot and your are running at rated power continuouly, then it may increase above the thermostat rating, but it should not "go into the red". If it does, you thermostat is defective, your air cleaner is clogged, or your radiator is clogged with chaff externally or clagged with crud internally, your water pump belt is slipping or the water pump is damaged, etc.
