You can use a dremel tool and a tile bit. That's the only thing I know of that's hard enough to grind out the hardened tool steel of an easy-out.

This is a bit like a dentist drill and it is meant for ceramic tile. Not real expensive and you'll wonder why you ever bought an easy-out in the first place.

REMEMBER: Easy-outs.... aren't!
