Most butcher shops around here over the years have made most of their money by selling choice-cut steaks out of the customers hanging halves. Years ago, I have been in several and seen large amounts of sirloin steaks, T-bone steaks, rib eye steaks and very little roasts, etc. They simply sell the steaks at 100 percent profit.
