They're called "meanders", the water on the outside of the bend travels faster than on the inside, that erodes the outside banks and the slower flow on the inside drops sediment there, making the curve even more extreme. Eventually the outside of the adjacent bends will erode enough to meet, the river will flow straight through and the curved part will be left as an "oxbow" lake, the shape of a horse shoe, if you will...
