Definitely go with poured slab and stick-built (vertical stud) construction, not pole barn. Probably want to consider conventional siding (OSB with something over it) rather than steel siding- easier to seal and insulate, and probably not much more expensive, after you consider the cost of purlins to nail the metal to.
