While I won`t argue the fact of timing causing an overheat problem, the fact that it "fired right up" leads me to believe the timing isn`t very far off. Had it been working and under a load, might be a different stroy, but sitting idling shouldn`t cause a problem.
Sounds really stupid to ask, but is the thermostat installed in the proper direction? Just because the head was repaired by a local "expert" doesn`t mean there isn`t a problem with it getting combustion into the cooling system. Might be worth while to check for combustion in the radiator.
