Temperature gauges are as common as zits on a 16-year-old's face. Any 2" temperature gauge from the auto parts store will do. There are dozens of online places where you can purchase a "genuine" reproduction IH temperature gauge, including this site.
Get an owner's manual for your tractor, also available from this site.
The engine oil level is checked using the two petcocks on the side of the oil pan. If no oil comes out the lower petcock, add oil through the big cap on the right front of the engine until it runs out the top petcock.
The hydraulic oil is checked using the dipstick in the pipe on the right side under the gas tank. If there is no dipstick then fill it until you can see oil in the pipe.
