Soot is a very fine form of carbon that results from incomplete combustion of carbon based fuels, whether that be oil or wood or coal or something else. It"s what you see coming out of the exhaust on a diesel engine under heavy throttle, where there"s more fuel going into the cylinder than is completely burned. Because of the high compression in a diesel, there"s always some blowby, which forces the soot past the rings, where it collects in the oil. It"s why even properly tuned diesl turns oil black a lot faster than a gas engine.
