Im trying to think northern latitudes here. My experience in your part of the northern US is very limited so take this for what it is. I'd not be too inclined to try the forage sorghums, they are warm season grasses. Following rye, a mixture of soybeans and millet would make a good annual hay crop. Its one I've used here with good success.
For perennial forage, and alfalfa timothy blend strikes me as the perfect combination. High yields of first cutting and high quality. Later cuttings would be more alfalfa and could be square baled for either cash hay sales or to use as a quality booster in bad weather or for a sick cow.
