OT; potatoes at the store

Hi, At this time of the year, I wonder about the potatoes I buy. I'm in Ohio and just bought some good taters. the bag says they are from ND from a gricery stroe, but I am wondering, how do they keep so well this late in the year? they look great when about 1 month ago, some others didnt kee well. Any potato farmers out there - Do you use cold storage?
Also, where do onions come from this time of the year? Were they in storage too?
