What oil to replace

I recently purchased a Lamborghini R904DT farm tractor which seems to be a victim of neglect. I've never seen an air filter so clogged, and it was dated 1974! Anyway, I've drained the hydraulics, rear differential and transmission before realizing that no one can tell me with any certainty what kind of oil to replace. A representative with SAME (SAME owns Lamborghini) has told me to use 10W30 for everything. Should I just go with that? Or should I consider the possible differences in the intended climate and use something else? Why don't we use a single oil for everything here in the US?
