Couple of the guys got it right--the insurance company has to satisfy you and they're doing the easy way.
1) hold out for what you can show/believe is a fair value.
2) you might look the car up in HEMMINGS for the value. You might also ask/call around for a classic car appaisor. A mint condition car that old is worth more then "blue book".
