Check the oil pressure right at the fitting on the block, with a spare gauge, to rule out a (nearly) clogged line, or a bad gauge. If you get the same results there, QUIT running it until you can drop the oil pan, and check for a loose oil pickup tube and/or excessive play in the oil pump shaft bushings, or gear and/or housing wear. If it really isn't oiling for "a couple of minutes" upon startup, you're gonna KILL it, if you keep running it that way.
