If I had to rewire the ford (and I did an 8N once), I'd get a wiring diagram and a wiring kit from CT or some place. A starter is series wound, the field coils are in series with the armature, which means its not particular about polarity. Most drill and vacuum cleaner motors are series motors and run just fine on AC. Starters won't run fine on AC because the field core isn't laminated. Series motors are not particularly voltage sensitive, so a 6 volt starter works on 12 though it can be destroyed by running way too long. A series motor also has the capability if powered and left unloaded of getting to excessive speed. Series motors above about a hp have to be protected from loss of load or they will throw the windings. To figure out adding an alternator, find a wiring diagram of a truck using the alternator and use the alternator parts of that diagram. Or search this discussion page and others on YT and other tractor discussion pages, the subject of alternator conversions is discussed in detail about once a week... Gerald J.
