T-Bone I need help

4 ft. deli cooler how do I set the limit on the thermostat? My wife has payed three service calls on this thing and the tec still can`t get the limits set. I know where the screws or on the stat but I don`t know where to start.It is coming on at 65* and off at o*. Thermostat is new> Thanks, KJM
