I need help on 1987 366 truck engine

I have a 87 GMC 7000 series truck that is running poorly.It had a 600CFM holley on it when i got it a year ago.It started running rough so i had the carb rebuilt the mechanic could never get it to run right the right idle screw or air what ever it is called would not effect the idle at all.I asked a Holley expert and he said the motor pulls so much vacumn it would not adjust and it needs more CFM's.I bought a brand new 3310 series 750 CFM vaccumn secondary carb and it still runs bad.Did this motor come with a Holley or a Quadrajet?The valves rattle pretty bad did they reccomend a higher octange gas for this motor?
