We have had good luck doing it, but the cash box is bolted down and has a lock on it. Had a problem with a neighbor kid the first year trying to fish money out of the slot until I 'explained' what was going to happen to him if I ever saw him on the farm again. I think most people want to be honest and are. You can't afford to pay some one to sit there all day. If a few bucks worth of produce walk away once in a while, it's just the cost of doing business.
