Thermal inertia of the block,heads and lube oil.
If running on alcohol the heat absorbed by the fuel turning from liquid to vapour absorbs many btu's.
The engines are operated rich which tends to lower over all temps.
There maybe a gallon or two of coolant water in a tank gravity feeding the coolant jackets. The engine coolant stays at 212F as the steam boils off and is repalced with more coolant. Works too for the space shuttle the load bay doors are closed.
