Ted, The correct color for your M is #2150 rouge red available at your Case NH dealer. There are some fine automotive quality paints available from DuPont, Sherwin Williams, Martin Senior etc, and I"m not sure of their cross over numbers, but they are significantly more expensive than IH factory paint. I would shy away from hardware store paint, or TSC and other aftermarket tractor supply houses, as they are not of the same high quality as Case NH and the others. Yes, there were indeed wide front systems available for the M, factory and aftermarket. The factory wide front for your 1951 would have had the tierods mounted ahead of the axle. Swartz which was the biggest aftermarket seller had tierods behind the axle.
