My dad was on a Corvette escort vessel during WWII and he told me that they used to soften up brand new denim trousers (that's what he called them) by tying a rope on them and hangine them over the side of the ship into the salt water (for how long I don't remember), then washing them. If you're too far from the ocean, maybe make up some salt water of your own and soak those coveralls. Hope it works and doesn't loosen up all the stitching and make them fall apart.
