You are correct, there is 1 fill port for the whole rear end. Often, putting the whole 5 gallons in will get you over full, which worsens any leaks at brakes, or into the clutch housing. I suspect not quite all the oil drains, plus there may be some sludge buildup that does not drain out. I would start with 4 gallons, and then check the dipstick, and add a quart at a time, until the dipstick reads FULL.
