Did a project this past summer where I was using a lot of 1x6 V grove an bead board on things like wanscott, cabinets and the like. Materials supplier had to special order the v grouve and bead board and that was cheaper than the in stock clear pine. You have an excellent idea, just place your chair rail at the correct height to cut down on waste. I would suggest that you put this up over a layer of 1/2" drywall and mud the joints at least one pass. I have a project comming up this spring were the lady wants an attached garage with interior finished to match the inside of her house including flooring heat and air conditioning. I like that kind of work.
