I have several friends who have set-ups like you are describing. A lot of small horse farms use half (or all) of an eve loft as apartments. Seems most of the ones I have seen are loft type (plumbing is a lot easier). Have helped a lot of folks build and remodel stuff like this. Since I can't speak for the laws in your area email me if you have questions. Fortunately the Nazi's haven't taken over completely here. Long as you don't set new electric service and it is for ag use you can still do pretty much what you want on your land. I've got a bent of a barn walled off with a bed and some essentials if I need to stay at the farm during calving or foaling.
