Hi Dan, Pick the pigweed when it's young and tender. They seem to do well in my garden and I let a patch grow,, comes up thick as hair on a dog.. Then I pull them when about 3 or 4" high. Wash them and cook roots and all, like you would beet tops or spinach.. They are very good.. Don't let them get too big,, they get woody and tough.. Give em a try..
