It will function just as well as a 12V system - If you perform proper maintence on it; clean tight connections,good cables etc. Do not use the wimpy 6ga battery cables sold in most discount auto stores on a 6V system, they will not carry sufficient current from the battery. "0" ga cables are original on 6Vsystems, however 2ga will work. Your asessment of the cause of your starter breakage is correct in my opinion.
