That article featured today from the articles section is a pretty good reference, however the author almost implies that removing all that old brass (needle seat, jets, fuel nozzle) is as easy as pie. Well for those of us who have twisted the brass off and were left with a useless casting, beware that it isn't just that easy. I've found that you have to heat the casting well and evenly (if it's cast iron) with a propane torch before attempting it. Some guys heat up the casting in their gas barbeque. Whatever method you use, must make sure of the pitfalls of trying to remove the brass without knowing of the possible outcome.
