Some questions on studs and head studs nuts vs headbolts

Often wondered why most studs (maybe all of them) have coarse thread at one end and fine thread at the other. While on the topic, what is the best system for anchoring a head down, headbolts or studs with nuts? Is their any advantage or disadvantage to either system? I see some flatheads for example use one method and then another type will use the other.
