Chevy VORTEC Engines

Since the brake lines started rusting through on my old pickup, I though I should get a newer one to pull my tractors around the country. I have looked at two Chevys and two GMCs (96-97). All four were low on engine coolant. The one 96 GMC smelled like burned antifreeze and had a "rattle" in the engine. I assume the "rattle" to be piston slap caused by antifreeze on the piston pins.
Does anyone know if this is a known problem with these engines (5.0-5.7 Liter V8)?
