Sprocket behind the bale chute side tire may be for driving the pump used with the hydraulic bale tension option. There are some images of 315's on the web that show that option on a baler and it looks like that would be its function.
As Traditional Farmer posted: "get an original hard copy of the parts and operators manuals". You can see and print off info from the on line parts catalog at the New Holland parts catalog site, but a hard copy of the Operator's Manual will help a lot until you get familiar with your baler.
