Just make a sun screen for it like the bill on ball caps. I have made several to shield the screen on digital scales. I cut the side out of a 2 1/2 gallon plastic jug. They are about the same width as my scale heads. You would just need to look around for a jug that would be about the same width. Also you can just use a heat gun to bend the corners in wider plastic. To hold the sun screen on the scale I just use a long stainless steel hose clamp.
I like the idea of using a plastic electric box. You could find a water proof one and have a lid to shut when not in use. I have them that have flip latches on them.
Another idea would be find an old fender mounted radio that had the front cover/lid. That would act as a sun screen and then a cover. Just need to remove the radio from the box.
