That is a open question because you did not mention what kind of grass we are talking about.

For a lawn it is useless because most lawn grass is a hybrid.
The seed will not grow true to the parent.
And mowing controls weeds also.
If the grass is going to seed the weeds are going to seed also.

If you are dealing with just a native wild grass from your area that only spreads by seed then by all means let it go to seed and grow long enough for the seed to mature. This means mowing only once a year in the fall to cut any trees that may have started to sprout.
