I like them up by the head too. Makes it easy to drop all the insides into a bucket for disposal. Feet first makes it harder to get the insides out as you have to scoop to clear the ribs/chest cavity. Head up is a nice and quick way. Makes it easier to wash out too. The only reason for me to hang back feet up is if I want to do a shoulder mount. Hanging by the head/neck is not good for a shoulder mount as it damages the hair/head.
