Red Delicious is the absolute best for picking off the tree and eating. It also makes perfectly delicious apple pie. We have not tried canning them, but if you cut them into slices, they freeze very well. We tried one time to make apple sauce from the red delicious. That did not work out so well, but we were able to "salvage" it and turn it into apple butter.
We also have a yellow summer apple tree, and those yellow apples make very good apple sauce.
