The majority of US consumers will tend to go with whats cheapest. Its sad but true. And the people on food stamps are not going to spend their monthly allowance on high priced beef. And those people make up for quite a large percentage of the population these days. People want cheap food, and when prices go up, the stores have to work that much harder to market those higher prices, to make it seem like your still getting a good deal. That being said, I miss raising cattle! But I still get my half a beef every year.
