There is nothing wrong with dark syrup. It has always been the set standard for grading and selling syrup, Light syrup sells higher than dark, however there are 3 gradeing standards, Canadian, New York, and Vermont standards. The color varies between them. The NY standard for Medium Amber is lighter color than the other two. Kinda stupid system, but it is what it is. Late run dark syrup produced after the trees start budding can be bitter though. Loren
