If you travel outside of North America you will find many places that sell eggs unrefrigerated. A good quality unwashed egg from pasture chickens will keep for weeks without refrigeration.
The problem comes in that USDA rules say every egg sold in the U.S. must be washed. Washing strips the egg of its protective coating making it go bad by allowing bacteria in. Refrigerating the egg prolongs the eggs life by slowing down bacteria growth. The USDA also has rules that every egg sold must be refrigerated at the time of sale. But enough on rules......
My concern would be with the fact that people in america have become accustom to eating very low bacteria food due to refrigeration of everything. Our stomachs can not take even a slight bit of bacteria without us becoming sick. Just one customer that comes down with food poisoning that can be linked back to your eggs will bring the raft of every government official down on your farm.
I can see a day when the egg board gets as much power in our government as the milk board has and every farm egg sale will be banned due to regulations.
