Have never baked vegtables in with ham. I kind of think they would get a bit too salty.
Here is a one-pot recipe to use up left-over ham. You can use a crockpot if you like.
Boil your ham with diced onion, (season the soup base with black pepper and a tiny amount of garlic powder and onion powder) until the ham is tender and falls apart. (I add enough water so that the soup is not real salty). Add soaked navy beans and cook until mostly tender. Then add more diced onion, chunks of potato, shredded carrot and a package of frozen sweetcorn. Cook until vegtables are tender.
