If it is too hot, as I can imagine, it will cook it and not dry it. Maybe if you put it real high above the stove with a small muffin fan blowing air over it. It should be on a rack, open to air on top and bottom, I would not do it on a baking sheet. Perhaps on a rack above the baking sheet, that way it will be protected from excessive heat and will collect what ever drips off the meat. Have you got a recipe figured out yet? I like to marinate the strips in soy sauce and black pepper (love black pepper) I also add sweetning such as honey or maple syrup.
