I'm gonna try making beef jerky for the first time, my brother has made alot of it in his dehydrator. I dont have one, but I found a oven recipe, I was thinking instead of useing the oven id put the meat on a baking sheet, on a wire rack on top of the wood stove. Would the steady heat and open pan dry the meat to make jerky?? Or should I just use the oven? Thanks for any advice,

Kinda like what I do with my Brinkman smoker.
Use the flavored wood of your choice in the stove.
 
If it is too hot, as I can imagine, it will cook it and not dry it. Maybe if you put it real high above the stove with a small muffin fan blowing air over it. It should be on a rack, open to air on top and bottom, I would not do it on a baking sheet. Perhaps on a rack above the baking sheet, that way it will be protected from excessive heat and will collect what ever drips off the meat. Have you got a recipe figured out yet? I like to marinate the strips in soy sauce and black pepper (love black pepper) I also add sweetning such as honey or maple syrup.
 
I have the Loundon broil cut up in strips soaking in soy, worcestershire, salt, black pepper, which I also love,and garlic powder. I don't have any onion powder, so I put in some fresh onion???? Thanks for the info.
 
Ok old, do u leave the oven door cracked open? And how long too dry it in the oven?? Thanks,
 
I make mine as Old said, in the oven at 150, on the rack.
I don't leave the door open.
Time depends on how much you put in there and how thick the pieces are.
Generally about 6 hours for mine, but you can tell by testing it.
It will get too crispy if you leave it in too long.

I put toothpicks thru the strips and hang then on the oven racks. Set the oven to the lowest setting, 150-160 and crack the door a lil.
 
and...........if you use the oven, be sure to line the bottom with aluminum foil. Or the mrs will tan your hide!
 
Been making beef & venison jerky for years in a dehydrator. I think a low temp in an oven would work fine, but you need some way to keep it up on a rack of some kind. And be sure to have a way to clean the rack afterwards and make sure there's something to catch the drippings or you'll have a real mess!
 
You can buy Jerky making kits.called "Hi-Mountain" to make it in the oven. Tastes very good. I use and make it make the time..
 
Sure can make it over a wood burner. I used to have small racks that I put on 4 bricks on top of my wood burner. That was when the kids were still home, oldest daughter would keep check on it for me. Sure was funny how so much of it came up missing just as it was done LOL. Those were the good old days. Keith
 
I use an electric smoker and it works well. Doing it in the over works, but your house smells like jerky for weeks. Maybe some like that, I didn't care for the smell lingering that long.
 
I keep it closed and as for how long that is a thing that is hard to pin point due to the thicker the meat the longer it takes. I need to do some more deer jerky very soon my son keeps taking it to work with him

I use a little round dehydrator. I also have tried using electric smokers. The dehydrater is easier to regulate.
