if handled properly, sweet potatoes will keep well in excess of 12 months. don't let them get chilling injury. immediately after harvest, they need to be "cured" at around 85 degrees F for a week or two. otherwise they're not sweet. after that, keep between 55 and 65. don't let them get below 50-55. be gentle during harvest- the skin is very thin. we dig them, put them in cardboard boxes dirty, and straight to the hot room. wash them as we use them. here, (NY) not too much bothers them in terms of insects and diseases, but deer LOVE them, so if that is an issue look out. if you keep them completely weed free for the first month, they will "run" and form a dense canopy and be set for the rest of the season.
