i simmer them for them for 4 hrs, with onion and garlic. then add some allspice. remove from heat and debone it all, use just the meat. while doing that let the liquid cool and kinda jell then remove all the fat from the top. then heat it up and pour over the meat thats in a pan. let gell overnite and then when you get up its ready. then cut into squares and pour vinegar on it. and waalaa mm good! just put it in the fridge now. thats a lot of work but man its good.
