Dave My experience with the Spoonbill was not what I would call good eating although totally boneless they do have a very fatty greasy taste that I haven't forgot for 20 years I only ever ate Catfish one time Baked home style in Oklahoma and I would definitely go for some if I could find someone up here to bake it the same way with the kind of seasonings they used.
Any Cats I caught were given to some of my Black friends.. I even tried some after they cooked it , but wasn't the same a Oklahoma style.
