Knee's bothering me so you folks are stuck with me a little bit

Loved fishing for (and eating) catfish and panfish as a kid.. Went fishing once on lake erie and was catching sheepshead that the guy was saying was junk fish, slitting them open, and throwing them back....
Few years later, they were showing up in the rivers at home and folks called them perch & loved them... Same time, noone would eat a carp except the colored folks and they (carp) were called ___ bass.....
catfish was the best...

FF and I read some of you folks talking about spoonbill like it's junk but when I googled it, it's a catfish. Folks raise carp here (grass carp) to eat and folks go nuts over the greasy things but will catch a catfish and throw it back....

Guess it is what you were raised with......

Dave2,

Nothing better than a nice piece of deep fried catfish from the skillet . People around here fish for catfish and bass . Brother In Law included . They even have tournements around here for them , bass especially . Although some do catch bluegill and croppie to eat . I guess that it is what you are raised up with . I only eat catfish and what ever the fast food joints use on their fish sandwiches.

(quoted from post at 04:57:34 01/03/12) Dave My experience with the Spoonbill was not what I would call good eating although totally boneless they do have a very fatty greasy taste that I haven't forgot for 20 years I only ever ate Catfish one time Baked home style in Oklahoma and I would definitely go for some if I could find someone up here to bake it the same way with the kind of seasonings they used.

Any Cats I caught were given to some of my Black friends.. I even tried some after they cooked it , but wasn't the same a Oklahoma style.

gotta be where you come from then.... and the fish itself.....

Tried farm catfish outta the commissary and it just don't do it.....

FF fish sand is a Whitefish, caught off the NW coast of US. Big trawlers/factory boats scoop them up by the tons. In 30 minutes from the time the fish hits the deck it is quick frozen. Wonder why they taste so good? The show did mention McD as a user.

An to go with that, I saw a show from Idaho about FF french fries. After watching what they go through, I don't fool with hand cut taters any more. I go to the frozen foods in the groc. store and buy FF/FF style. Great tasting.

I just bought 100 Channel Cats for my pond at about 6-8". Will be ready to chew on in a couple of years at 2-3#. Excellent eating when fried as said. I use Cajun prepared coating, better than I can come up with. Throw em in hot grease and when they float pull em out. Serve with horseradish/catsup "cocktail sauce" or "tarter sauce" (mayo, onion and pickles chopped fine and cream of tartar powder all mixed up good). Heinz makes both. Also taters we discussed and a salad of choice or cole slaw.

If you like hook and line or trot line, high fin blue or fishing live bait, flathead or opelousas (especially) cats are superb if you get them before they get too big. Blue doesn't seem to matter...don't accumulate a lot of fat like channels and flat heads.

Dave it's kinda funny about fish. When I was a kid in NJ about the only proplr who fished for and kept Card and Suckers were the black families. Everyone kept pan fish, bass, pearch and cats.

Moved to Mn when I was. Out here in 1971 folks called junk fish ruff fish. Ruff fish included bass and pearch. Now bass fishing is big up here. Go figure.

Really, if I can get the raw root and grind it up I will eat it with a lot of things.....Campbell's Chicken Noodle Soup excepted. Grin.

I love it with meat or sea food. The more the nasal passages bleed, the better it is. Another grin.
