Oh, if I spelled it wrong, it wouldn't be the first time. Yeah, I remember back east veal was suppose to be the relief from a 'dairy bull' showing up at calving time. around here is wasn't the age, but the conditions growers were told it must live in till slaughter, cement floor, darkness, cold, all suppose to retain the flavor or texture. I think that was as much an old wives tale as the peta people version. The only way out was have the suck on old gargot 3 t!tt!e cows, that made up for the dungeon barns. Otherwise, I think you wouldn't find it in the market at all. I just found a jar in the fridge-'PARMESAN'.
