Had a calf that had issues so we bottle fed her hoping she would get better but after a month and a half we gave up and butchered her so now we have veal any good recipies?rear quarter ribs ect ect.Would like to try smoking or grill recipies.
 
I think the word can be spelled both ways, but I got a bunch more hits googling "parmesan".

Veal is almost a lost art, these days. An outfit in our area tried franchising veal raising operations about 25 years ago, but demand had been reduced so much by the animal rights folks that they didn't make it. They could never get past killing that poor thing while it was still a child. Also, the confinement was an issue.
 
Oh, if I spelled it wrong, it wouldn't be the first time. Yeah, I remember back east veal was suppose to be the relief from a 'dairy bull' showing up at calving time. around here is wasn't the age, but the conditions growers were told it must live in till slaughter, cement floor, darkness, cold, all suppose to retain the flavor or texture. I think that was as much an old wives tale as the peta people version. The only way out was have the suck on old gargot 3 t!tt!e cows, that made up for the dungeon barns. Otherwise, I think you wouldn't find it in the market at all. I just found a jar in the fridge-'PARMESAN'.
 
the veal breast you can slice a pocket in it and stuff it with bread stuffing,it is good! The back legs or rounds are usually boned out and sliced thin for veal cutlet, that is real good, I thick you could grill any of it,put any seasoning on it that you like

Cut some thick slabs outa the quarters and butterfly them then pound them out bread salt & pepper and fry up some nice schnitzel
 
"Hoping she would get better" would infer it was sick, so you are now going to eat it. whom shall we perform the autopsy on?
 
Front lege were not working right had to help her get up some times and started to get to heavy. also blind.
