Thermostats are there to bring coolant up to specified temperature for efficient operation.
With out them the water pump would circulate the coolant continuously through the radiator, and never reach temperature on cold days, and only after a long time under load on warm days. The engine must be up to temperature to promote fuel efficiency and to decrease vapor formation, which creates sludge, in the crank case. Radiator shutters are another way of increasing coolant temperature.
